Leavening Agents

There are 2 chemical leavening agents we use while baking. Those agents would be baking soda and baking powder


Baking Soda

-is one ingredient called sodium bicarbonate (carbonate of soda)

-reacts with acid

-creates CO2 bubbles

Baking Powder

-double acting/reacts twice

-reaction 1: when mixed with liquids (about 25% of the reaction)

-reaction 2: when introduced to heat (remaining 75% of the action)
